we here in cebu have this term SSB which actually means "sakit sa baboy" or "pig sickness". no, it's not a local term for the "foot and mouth disease", rather, it's the curious sleepy syndrome when you had too much to eat. much like the baboy that would flop on its side and roll around in a mud pond after a heavy meal. i felt like doing a belly flop and do just that after my cholesterol busting, hypertension causing, heart attack inducing dinner at zubuchon. silly, i meant my bed, not a mud pond. the "see through" kitchen :) - check out the menu! we were on our way to merto for a grand burger dinner when my companion suggested we try the restaurant that just opened in one mango (right in the heart of cebu city). i had my tummy set for the oh-so-luscious-delicious beef burgers of merto but my ears perked up when she mentioned the restaurant name "zugbuchon". after getting a glowing review about the "best pig.... ever...

adobo is a filipino dish and all regions have their own unique take on the dish. in cebu, when one orders adobo you just might get the variety that's very similar to the crispy lechon kawali. in all respect, it is marinated using the standard adobo sauce: vinegar, soy sauce, garlic, peppercorn and bay leaf. the only difference is that the sauce is reduced and the pork pieces fried until it becomes very dry. the other version is to double cook the dish. once the sauce is reduced, the pork pieces are taken out and made to rest until it becomes cold. better yet, place it in a container and keep in the freezer. to cook, heat oil and deep fry the pork until the skin start to turn into a crackling. this process ensures that the insides are still soft whereas the exterior is fried to a crunchy crisp. this version is tastier than your usual lechon kawali without the need for mang tomas sauce. when i had this dish, i experimented further by tossing it in dinuguan. i like my adobo ...

dinuguan, otherwise known as pig's blood stew. traditionally cooked using the entrails but has since evolved into a healthier version using the standard cooking parts such as liempo (belly). speaking of "evolution", it was only a matter of time before someone decided to fry the meat/fat pieces to a crisp before cooking it via the usual dinuguan style. verdict? i love the texture and crispiness of this oh-so-sinful dish! grab this dish in sinugba, the gallery, cebu city!
